I had to resist the urge to buy all kinds of new stuff when I first got into making pastry. Surely, I dreamed, in short order I'll be turning out croissant and macarons worthy of the 16th Arrondissement. So I researched stand mixers, piping kits, specialized buckets for fermenting dough, and various silicone mats to measure, shape, and pipe perfectly sized baked goods.
But I didn't buy any of it. For a home baker with just a hobby, my hand mixer, hand-me-down rolling pin, and ingenuity got me most of the way to delicious and relatively attractive pastry. Certainly enough to impress a friend with a chocolate hazelnut babka for their birthday or bring a plate of flaky kougin aman to a neighbor.
When deciding how much to invest in something, I've always found it prudent to ask myself what I want it to be. Is it a hobby, or is it something more? If it's a hobby, use what you already have. If it's something more, invest in the right tools for the job.
That's the question I find echoing in my head when someone asks me about the difference between ChatGPT or Gemini and Chorus AI. Is it a hobby, or is it something more?
